Easy Chicken Burritos

1 lb boneless skinless chicken breasts cubed
1 tbsp olive oil
1 tbsp cumin
1 tbsp chili powder
salt and pepper to taste
1 15 oz. can fire roasted diced or crushed tomatoes
shredded cheese
pico de gallo
2 c cooked corn
sour cream (optional)

In a skillet saute the chicken in olive oil, cumin and chili powder (salt and pepper if wanted) until browned on all sides. Add the tomatoes and allow to simmer for 15 minutes. In the meantime prepare the rice and corn. Then just serve the chicken in tortillas with rice and top with cheese salas and corn and sour cream, roll em up like a burrito or can also be tacos. Youo can add whatever toppings your family likes. This is so simple and delicious, and best of all Grace loves it!
