Cranberry Orange Scones with White Chocolate (Carla)

Ingredients
I went to my scone class today and we made these 2 recipes... They were SO YUMMY

Cranberry Orange Scones with White Chocolate

1 3/4 cups Flour
1/2 cup Sugar
2 tsp baking powder
1/2 tsp salt
5 tbsp butter (straight from fridge)
1/2 cup white chocolate chips
1 cup frozen cranberries
9 tbsp orange juice


Honey Butter
1/2 cup butter
1/3 cup Creamed honey
Combine butter and honey

Lemon Curd
1/2 cup fresh lemon juice
Lemon rind from one lemon
1/2 cup sugar
2 eggs
1/3 cup butter

In a sauce pan whisk together all but butter. Add butter. Cook over med/low heat whisking constantly until thick enough to hold marks from whisk or starts to boil. Cool. Keeps for up to one week. Note: do not leave unattended while cooking or you will have scrambled eggs.

Procedure
Preheat oven to 400F. In a large bowl, stir together first 4 ingredients. Cut in cold butter, so the butter is left in pea sized bits. Stir in white chocolate and cranberries. mix in orange juice. The trick to making these is to not overmix them. Mix it slightly, then dump onto the counter. Kneed only until dough just comes together - it will still be pretty crumbly. Shape into an 8 inch circle. Cut into 8 triangles. Place on baking sheet and bake for 7 minutes. Turn sheet and bake another 7 minutes. They should be slightly brown and firm to the touch. Serve warm with honey butter and lemon curd and strawberry jam.
