Broccoli and Rice Casserole (Erin)

heat 2 tbs oil in pan
saute 1/4 c chopped onion, 14c celeryadd frozen or thawed broccoli, steam & stir til soft
add: 8 oz velveeta (or cheez whiz)
1 cup water
1 cup minute rice
1 cream of chicken soup
1/2 cup milk

cook til bubbly - pour into casserolebake uncovered 20 minutes at 350 degrees
