Meatloaf (Kari)


Ok- this is a sweet and tangy meatloaf that I like.

1/2 cup packed brown sugar (although I use 1/4 C most of the time)
1/2 cup ketchup (or bbq)
1 1/2 pounds lean ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine cracker crumbs
I also add green pepper b/c I like green pepper.

1. Preheat oven to 350. Grease loaf pan.
2. Press brown sugar on bottom of pan and spread ketchup (or bbq) on the top.
3. Mixup the rest for the loaf.
4. Bake for 1 hr.
