Jambalaya (Jen)

Ingredients

(dh and all his friends swear this is the best thing created)
3 tbsp butter
1 green pepper, chopped
1 red pepper, chopped
2 stalks celery, chopped
1 onion, chopped
1 large tomato, chopped
1 chicken breast, cut into bite sized pieces
6 Hillshire Farms hot links, cut into bite sized pieces
1 slab ham, cut into bite sized pieces
2 cups cooked popcorn shrimp
12 oz tomato sauce
3- 15 oz cans chicken broth
2 cups rice

seasoning blend
1/2 tsp. black pepper
1/2 tsp white pepper
1/2 tsp paprika
1/2 tsp cayanne pepper
1/2 tsp cumin
1 tsp dry mustard
1/2 tsp thyme
1 tsp salt
4 bay leaves

Procedure
In large stock pot, saute onions, peppers and celery in butter until soft.Add chicken, sausage & Ham.Cook 5 minutes or until chickenis cooked through.Add seasonings, except bay leavesAdd chopped tomatos & shrimpAdd tomato sauce & chicken brothBring to a boilAdd rice & bay leavesSimmer 30 minutes, stir every 10 min to make sure rice is not sticking to potMakes 10-12 LARGE servings.
