Chicken Marsala (Andrea)

1/4 cup of flour
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp oregano
1/4 cup of butter
1/4 cup of olive oil
1 cup fresh mushrooms
1/2 cup marsala wine
1/4 cup sherry
boneless skinless chicken breast
mozzarella cheese

In a shallow dish, mix flour, salt, pepper and oregano. Coat chicken in mixture.

In a large skillet, melt butter in oil over medium heat. Place chicken in pan and lightly brown. Turn over chicken pieces and add mushrooms. Pour in marsala wine and sherry. Cover skillet; simmer chicken, turning once, until no longer pink and juices are clear. At the end I top with some mozzarella cheese and asparagus!
