Zucchini Bake (Lindsey)

1 Medium zucchini
1 small onion
1 c. biscuit mix ( I used Bisquick)
1/4 tsp. Oregano
1/4 tsp Pepper
1/2 tsp. Salt
1/4 tsp. Garlic Powder
1/2 tsp. Parsley
1/2 c. parmesan cheese
1/4 c. vegtable oil
2 eggs lightly beaten
1/4 c. water

I cubed my zucchini and roughly chopped the onion.Combine all dry ingredients then add oil, eggs, water.After combined well add zucchini and onions.I sprinkled some more parmesan cheese, bread crumbs and a few dabs of butter on the topI put mine in a cassarole dish uncovered at 400 degrees for 40-45 minutes. Time may vary depending on the size of cassarole dish. Make sure to check the middle so it's not doughy! was soooo good!!
