Salsa Chicken and Dirty Rice (Crystal)

This is something I just came up with - it tastes so good - Sylvia loves the Dirty Rice!

Dirty Rice
2 cups water
4 tablespoons of salsa
1 cup rice (not minute rice)

Bring water and salsa to a boil and pour in rice and stir - put on low heat and let cook for 20 minutes. At this time you may season some more with chili powder/paprika.Then add 2 cups frozen corn and one can of (drained) black beans and stir.Continue cooking on low heat for another 7-10 minutes and serve.

Salsa Chicken
2-3 chicken breasts (boneless/skinless)
small jar of salsa (I use the leftover from the rice)
seasonings
Cheddar cheese

Rinse and separate chicken breasts.
Coat bottom of pan with salsa.
Lay down chicken breasts.
Pour remaining salsa on chicken.
Cover with tinfoil and bake at 350 for 45 minutes
Remove from oven and sprinkle with cheese and serve.
